Once the pasta is cooked it's really quick to make and I'm sure much lower in calories than the dish I've been ordering.
Pesto Cream and Artichoke Tortellini
- 2 c cheese tortellini, cooked*
- 2 c artichoke hearts, diced
- 1/4 c heavy cream or half & half
- 1/4 c pesto
- 1/4 c grated Parmesan cheese
1) Cut artichoke hearts in half.
